Culinary Nutrition Certificate of Training - Content Developer and Review Opportunities

The program will consist of 4, 2- hour modules:
Culinary Nutrition Module 1 – Food as a Key Component of Nutrition
This module’s goal is to demonstrate the impact of food and basic cooking skills on healthy eating practices. We will review what you may already know about food trends and cooking and emphasize how these skills can be useful in a variety of practice settings.
At the conclusion of this module, participants will be able to:
1. List and discuss current and forecasted food trends and the impact on the dietetics profession.
2. Describe and demonstrate correct measuring, weighing and knife skills.
3. Develop necessary kitchen equipment lists for home use, providing a rationale for inclusion.
Culinary Nutrition Module 2 – The Cornerstones of Healthy Eating: Food Safety and Ingredient Selection
This module’s goal is to create a foundation for safe and healthy cooking, as well as understanding key food safety practices and the rationale to help establish critical kitchen skills. This module will also prepare you to complete advanced certification in food safety which is required by some employers of culinary nutritionists. Finally, we will review the importance of thoughtful ingredient selection and its impact on nutrition, taste and cost of meals and snacks.
At the conclusion of this module, participants will be able to:
1. List and discuss 6 key food safety practices critical for home use and the rationale for each.
2. Select appropriate ingredients based on seasonality, use, nutritional value, specifications.
3. Develop storage guidelines for food and beverages to maximize quality and safety.
Culinary Nutrition Module 3 – Beyond “Cooking”: Food Preparation Techniques
The goal of this module is to examine all of the different methods of food preparation, not just that done on the stove or in the oven. Learning the different types of hot and cold food preparation can elevate discussions about planning/eating healthy meals.
At the conclusion of this module, participants will be able to:
1. Describe hot food/cooking methods, including correct use of equipment and ingredient(s).
2. Describe cold food preparation, including correct use of equipment and ingredient(s).
3. Identify and discuss baking techniques, including correct use ingredients and equipment.
Culinary Nutrition Module 4 – Planning for Healthy Meals & Snacks
The goal of this module is to discuss how you, as a dietetics professional, can practice and teach strategies for menu planning. We will discuss the importance of flavor, visual appeal and texture on the enjoyment of meals and snacks. Then, assess the impact of individual needs on meal planning. Finally, we will review population dietary guidelines and learn how to incorporate them into menu planning and teaching.
At the conclusion of this module, participants will be able to:
1. Plan menus that incorporate consideration of age, health, special needs, diet type (regular, diet restricted, vegetarian), cultural and ethnic parameters.
2. Plan menus that meet current nutrition recommendations and guidelines and budgetary constraints.
3. Plan menus that are flavorful and visually appealing.
Content developers are expected to complete their final slide decks with narration script in the PPT notes section by a date (TBD). Academy approved Item Writers/Reviewers will review PPTs and detailed narration scripting on a date (TBD) for the individual modules and may create test Questions and Answers by (TBD). Deadlines to remain flexible.
Content developers are typically responsible for developing each module and narrating entire modules once completed that will consist of a PowerPoint presentation with approximately 100 slides and narrative detailed script. Each module should contain activities: Journal articles, case studies, handouts, URLs and approved video if available.
Reviewers will assess an entire module and may develop the 10 questions with four responses and one correct answer for each Module Test for the attendees. Attendees will receive the CPEU for completing the modules, but must pass an additional final Post Test in the 4th module to receive a certificate of training. Online module detailed elements to include:
1) A Title for each module presentation
2) The full name and title of the content writer and or presenter. (If planned with a Dietetic Practice Group, special interest group or Committee, this name as well.)
3) The number of CPE Hours TBD and Level 2 of CPE was identified
4) Audience: Academy Members and Non Members
5) Program Description (5-6 sentences) and three Measureable Learning Objectives
6) A PowerPoint Presentation (without embedded audio or video) that includes a detailed written final script in the PPT speaker notes that CPD, staff or a paid writer could record. Photographs, graphs and charts can be included, clip art is discouraged. Academy PPT templates will be provided to each content writer/presenter. As mentioned above each module would probably be close to 100 slides.
7) At least three .pdf attachments. These should be cited in the notes for reference where applicable. We can accept attachments, one is usually the CPE certificate and we can merge attachments if needed. The more visual elements, attachments and weblinks that a presenter might submit, the more attractive it will be for the attendee. (Examples can be a Journal article, Self Assessment, a Handout or the PPT presentation for which we would remove the notes)
8) At least three URL links. These should be cited in the notes where applicable. (Example of URL links can be to a page on the Academy website, a salable publication or government agency website) References should be included in a separate word document in AMA Manual of Style, 10th edition when applicable.
9) One Question and Answer Test with 10 questions per module. (The Questions for a certificate program should be Multiple Choice, with four responses and the correct Answer for each needs to be identified.)

In 2005, as a direct response to the public health crisis of obesity in our youth, HCZ created an effort called the Healthy Living Initiative (HLI) to encourage our students and their families to incorporate healthy food choices and physical activity into their daily lives. In the years since then, we have sought to deepen our work in this area and have developed a strategic program model and growth plan called Healthy Harlem (HH), which consists of best practices in physical activity, nutrition education, and community support. Like HLI, this program is designed to instill a culture of healthy living throughout the Zone but is more expansive and strategically focused in the way we reach youth in our programs, their parents and care givers, and the community at-large.
Our three-pronged approach consists of Prevention, which serves the general youth population and their families;Treatment, which provides intensive support for at-risk youth and their parents and caregivers; and Medical Monitoring, which connects high-risk youth and their families to professional health care providers.
We are seeking part-time Nutrition Educators to work at our selected HCZ sites. They will work at a designated program location and will be part of a wellness team dedicated to improving nutrition and increasing physical activity for students at their respective site.

Background:
The New York City Coalition Against Hunger (NYCCAH) is a 501(c)3 non-profit organization that supports and advocates on behalf of the more than 1,100 soup kitchens and food pantries in New York City and the nearly 1.4 million low-income New Yorkers who live in households that cannot afford enough food. The Coalition works to meet the immediate food needs of low-income New Yorkers and enact innovative solutions to help society move "beyond the soup kitchen." The Coalition advances its mission both locally and nationally through: Policy Advocacy and Research; Increasing Access to Food and Benefits; Media and Communications; and Volunteerism.
The Coalition's Child Nutrition work spans all of these core functions – utilizing advocacy, outreach, communications, and volunteerism to increase access to federal child nutrition assistance programs, including school meals, the Summer Food Service Program, and Women, Infants, Children (WIC) program. The Child Nutrition Program Coordinator will work with NYCCAH staff and community partners to promote child nutrition programs and services locally and nationally. In addition, the Coordinator will work directly with NYCCAH's National AmeriCorps VISTA program, to provide technical assistance to VISTA members working with the Summer Food Service Program in their communities. This position is based in New York City and reports to the Director of Strategic Volunteerism and Child Nutrition.
Duties and Responsibilities:
The Child Nutrition Program Coordinator will:
• Coordinate the organization's policy, outreach, technical assistance, volunteerism, and research work on child nutrition programs, with a particular focus on the National School Breakfast Program (NSBP), the Summer Food Service Program (SFSP), and WIC.
• Develop and maintain positive working relationships with NSBP, SFSP, and WIC program administrators and keep abreast of program rules and regulations, policy guidance, and other issues regarding the programs across the U.S.
• Serve as NYCCAH's main liaison with local, state, and federal officials, as well as local, state, and national nonprofit organizations and stakeholders, regarding child nutrition programs.
• Recruit and manage volunteers for outreach and other service opportunities with NSBP, SFSP, WIC, and other child nutrition related programs, as part of NYCCAH's Strategic Volunteerism Initiative, Ending Hunger Through Citizen Service.
• Provide technical assistance to NSBP, SFSP, and WIC sites in NYC to advance best practices that increase access and utilization of these programs, as well as to write up periodic reports on best practices and challenges in those programs.
• Provide training and technical assistance to national service participants in NYC, NYS, and nationwide (including those in both NYCCAH's AmeriCorps VISTA program, and in any other interested programs) to increase their ability to conduct and coordinate NSBP and SFSP outreach and volunteerism.
• Monitor major policy and outreach developments in the WIC, National School Lunch and School Breakfast Programs, Summer Food Service Program, and Child and Adult Care Feeding Programs; partner with NYCCAH's Policy Department to respond, when appropriate.
• Provide bi-weekly progress reports to the Director of Strategic Volunteerism and Child Nutrition, and help prepare progress reports for funders, as needed.
• In partnership with other NYCCAH staff, prepare draft materials – e.g. public testimony, grant proposals, fact sheets, press releases, outreach materials – for the media, funders, elected officials, partner organizations, and the public.
• Create and update sections on the NYCCAH website regarding child nutrition programs.
• Perform other duties as assigned.
Qualifications:
The ideal candidate will have:
• A Bachelor's Degree with at least 3 years of related experience. A Master's Degree in social work, public health, public administration, public policy, non-profit management, or a related field is a plus.
• Experience working at either a nonprofit organization or a government agency on outreach and/or policy work relating to child nutrition and/or federal safety net programs.
• Experience providing training and technical assistance to non-profit organizations.
• Experience recruiting and managing volunteers.
• Knowledge of the NYC school system, including SchoolFood; and the administration of federal safety net programs, locally.
• Excellent writing, communication, and research skills.
• Strong interpersonal, collaborative, and relationship-building skills.
• Strong organizational and management skills, paying close attention to detail.
• Positive, self-starter attitude; ability to take initiative, think creatively, and work independently.

Job Description
The Bureau of Maternal, Infant and Reproductive Health (BMIRH), is a leader in promoting sexual and reproductive health, with a dedicated and talented team that excels at targeted initiatives in communities with high rates of unintended pregnancy, maternal morbidity and infant mortality. Our initiatives are informed by research and a data-to-action approach including: analyzing and reporting of data to inform priorities; establishing standards for program evaluation; promoting capacity building among our partners; conducting, publishing and presenting original research to inform our work; and developing new data sources to identify specific groups that are at higher risk than the total population.

BMIRH is engaged in several exciting initiatives, including the Nurse-Family Partnership, an evidence-based nationally replicated home visiting program for first-time moms; a hospital-based breastfeeding promotion initiative working with 17 hospitals; and reducing unintended pregnancy by increasing access to contraception.

The Research Unit conducts surveillance and monitors trends in maternal and infant deaths, births, breastfeeding, and pregnancy. Research efforts focus on identifying factors and trends that will be responsive to program and/or policy interventions, and working with Bureau program staff to recommend specific actions. The Unit also works with Bureau program staff to conduct evaluations of program initiatives. Data is analyzed from a variety of sources including birth files, maternal and infant death files, Community Health Survey, Youth Risk Behavior Survey, hospital discharge data, and numerous national data sources. The Bureau is the site of the NYC Pregnancy Risk Assessment Monitoring System (PRAMS), a project funded by the CDC.

BMIRH plans to expand our long-standing surveillance of teen pregnancies, births and contraceptive use to focus on unintended pregnancy in all women in NYC. We will continue data analysis to monitor the health and life experiences of women of reproductive age as well as women with a recent live birth, with special focus on conditions that contribute to poor pregnancy outcomes. This year BMIRH will launch a new Severe Maternal Morbidity (SMM) Surveillance Project, creating a protocol to assess the occurrence of SMM in NYC
The Research Director is responsible for providing strategic vision and direction for all research activities. Specific responsibilities include the following:

--Assure clear goals, objectives and timelines for unit activities.

--Hire, supervise and mentor staff.

--Liaise with Division of Epidemiology, including the Office of Vital Statistics, regarding BMIRH data needs and collaborative efforts.

--Collaborate closely with other BMIRH Units, and other Bureau/Divisions when appropriate, to assure that data analyses are appropriate, and that they inform and/or are responsive to program and policy directions and recommendations.

--Collaborate with external experts in research related to MIRH and identify/pursue collaborations to further work of BMIRH.

Minimum Qual Requirements
1. A baccalaureate degree from an accredited college and five years of full-time professional satisfactory experience acquired within the last fifteen years, in a health services setting such as a laboratory, hospital, or other patient care facility, or in a public health, environmental health, or mental hygiene program, at least 18 months of which must have been in a managerial capacity, consisting of managerial experience clearly demonstrating the ability to perform difficult and responsible managerial work, requiring independent decision-making concerning program management, planning, allocation of resources, and the scheduling and assignment of work

The Reportable Disease Data, Informatics, and Analysis Unit is responsible for the database systems, processing, data quality, and analysis of surveillance data for more than 73 infectious diseases. The unit also provides data management and epidemiologic and analytic support for outbreak investigations, including large-scale public health emergencies. The Research Analyst will assist in maintaining the critical daily operations and quality assurance of notifiable communicable disease surveillance data, supporting the analytic needs of research staff in the Bureau of Communicable Disease (BCD), and applying statistical methods to track trends, describe risk factors, and detect aberrations that could suggest disease clusters, outbreaks, or data quality issues. Activities will include the following:
- Support daily operations, maintenance, and quality assurance for surveillance data residing in and extracted from Maven, BCD's reportable disease surveillance database.
- Work collaboratively with BCD staff to develop general and disease-specific quality measures to ensure and improve the accuracy, timeliness, and efficiency of BCD investigations and data.
- Support BCD epidemiologists and subject matter experts by, e.g., ensuring that Maven data are clearly documented, advising BCD analytic staff on efficient methods for accessing data, automating data processes, and ensuring the quality and completeness of data available for analysis.
- Serve in weekly rotations, every 4-5 weeks: As analyst of the week, run automated statistical analyses to detect reportable disease clusters, review output and address issues, and de-duplicate persons requiring human review. As electronic clinical laboratory reporting analyst, clean electronic laboratory data requiring human review, run automated analyses, and collaborate with the Division of Informatics, Information Technology, and Telecommunications to identify and resolve laboratory reporting issues.
