If you need a course in Foods and/or Nutrition in order to complete the requirements for full matriculation in the program leading to the MPH in Public Health Nutrition, you may fulfill the requirements with the online summer courses listed below. To fulfill the requirement for an introductory course in Foods:

Introductory Foods—FCS 170
May 19 to June 27, 2014 On-line Class 3 credits
Basic concepts and techniques of food preparation and applied sensory evaluation of food.



To fulfill the requirement for an introductory course in Nutrition:

Special Topics: Vegetarian Food and Nutrition—FCS 404 Sec 01
May 19 to June 27, 2014 On-line Class 3 credits
This course is a study of vegetarian food and nutrition principles with application to health benefits and life cycle stages.

Global Nutrition—FCS 411
July 14 to August 8, 2014 On-line Class 3 credits
The history of food, hunger, and the global nature of food systems. Food & culture, environmental impact of food decisions, agricultural production, world populations relative to food supply, hunger, biotechnology, safety of our food supply, sustainability, effects of urbanization, and problems of under- and over-nutrition will be examined.
