Promoting and Supporting School Salad Bars:  A New Action Guide for State Health Practitioners

Improving access to fruits and vegetables can help increase the amount people eat.  With most U.S. children attending school daily, schools are in a good position to influence children’s healthy eating habits.  Salad bars are one way to offer kids a wide variety of quality fruits and vegetables on a daily basis.

State health departments can be instrumental in ensuring the success of school salad bars. 

A new guide, Promoting and Supporting School Salad Bars: An Action Guide for State Health Practitioners, was created for state public health practitioners and other groups who might be interested in getting more salad bars placed in schools. 

This action guide provides information to promote and support salad bars in schools by answering common questions, such as:

  • Will students use salad bars?
  • Are salad bars reimbursable by USDA?
  • How can you maintain the safety of salad bars?
  • Do salad bars cost schools more money?

The guide also provides specific activities to get the right partners engaged.  It shares ideas on how to address common barriers around salad bars, explains what to say to get the support of key decision-makers, and lays out steps to take to evaluate salad bar programs to help ensure their success.

Particularly useful are the “stories from the field,” which highlight how some states have successfully implemented salad bar programs.
