How the Culinary Manager Supports Our Mission:
You will help meet the needs of a diverse group of vulnerable New Yorkers – including working adults, children, homeless, seniors, and people with disabilities by directing and coordinating food service preparation and delivery for the Community Kitchen which prepares and serves approximately 10,000 free meals each month. Principal duties and responsibilities
As the Culinary Manager, you will help service our clients by:

Kitchen Management:
Managing the daily operations of the kitchen area, implementing the production process and ensuring the proper storage and food handling
Training cooks, kitchen staff, and volunteers in preparing and cooking food, and ensuring safe and efficient food service
Receiving and examining food and supplies to ensure quality and quantity meet established standards and specifications
Overseeing food and equipment inventory, batch food production and presentation, timely service of meals, portion control and special dietary requirements
Implementing Hazard Analysis and Critical Control Points (HACCP)
Conducting menu and meal analyses to respond to volume and various food service deliveries including the senior program, to go meals, and the community dinner service
Assuring proper food sanitation and infection control procedures are adhered to at all times
Planning and executing culinary services for special community events under the direction of the Director of the Community Kitchen and Pantry
Partnering with the Nutrition Education program to provide creative and interactive culinary learning activities
Partnering with the Community Kitchen program staff to ensure nutritious meals are provided for the senior program according to the NYC Department for the Aging (DFTA) requirements

Leadership and Staff Management:
Leading and training a culinary team to create inspiring and appetizing food for all food service deliveries
Coordinating the culinary team’s duties and schedule to ensure timely food production
Training and developing staff by providing regular constructive feedback, open communication, performance appraisals, and on-site learning opportunities
Performing other duties as assigned

Education and Skill Requirements:
BA degree in culinary arts, food services, or related field
ServSafe certified required

Hands on chef experience required
High volume, complex foodservice operations experience highly preferred
Hotel or banquet industry experience highly preferred
Required to stand and walk regularly, occasionally sit, lift and/or move up to 100 pounds

Develops Nutrition Discharge Plan.
Upon Resident transfer to another facility, communicates Resident nutritional information.
Participates in St. Ann’s Community committees as designated.
Contacts Residents and family members on a regular basis to provide communication and to enhance customer satisfaction.
Instructs and counsels Residents and families in nutrition concepts and needed dietary modifications; documents response to nutrition education.
Ensures that Resident receives prescribed diet, determines menus modifications, including supplemental feedings needed due to nutritional status, food tolerances and preferences.  Develops format for permanent cycle menu computer inputting.
Works with Nutrition Assistant as needed for computer inputting and selective menu printing.
Participates in Quality Improvement Program.
Provides tracking documentation for nutritional status of Resident
Performs other duties as assigned by Assistant Director Nutrition Services and Director of Dining and Nutrition Services.

This will be a full timeposition. M-F normal hours, no weekends, holidays or on call required.

Dietitians at VA medical centers perform or supervise others in providing a full range of professional dietetic services in areas of program development and organization, food preparation and service, patient therapy, and education and research. Clinical dieticians perform duties in the areas of medical nutrition and education, and are responsible for clinical nutrition management, quality improvement, and the nutritional phase of medical research studies. VA Dietitians work closely with physicians, nurses, and other allied health personnel to integrate the patient's nutritional care into the total treatment program. The Dietitian's contribution as a team member includes the nutritional assessment of patients and the development of nutritional care plans, nutrition interventions, and individualized nutrition education.

Major Duties:
Incumbent provides nutritional care for patients and provides patient screening and patient education. Develops implements and monitors the nutrition care plan, based on the physician's diet prescription and the Dietitian's nutritional assessment of the patient, participates with the health teams.

Required Skills
Bachelor's Degree in Dietetics, Food, Nutrition, Food Service Management, Institution Management or related science.
All applicants must be registered with the Commission on Dietetic Registration, the credentialing branch of the American Dietetic Association (ADA).
Verbal and written communication skills and computer skills required

Required Experience
Minimum of one (1) year of recent experience
Previous clinical nutrition practice experience
