Antibiotics have been used in human and animal medicine for decades. Reducing the use of antibiotics changes the dynamic between the food supply, food safety, and public health. Food safety practices may emerge a catalyst for change. This one-day conference will focus on the consequences, intended and unintended, of reducing antibiotics in the food system. Speakers will address current use of antibiotics in the food system; the intended and unintended consequences of reduced use; and responsible use and alternatives to antibiotics.

Importantly, dysbiosis - dyregulation of this endemic microbiome - has been implicated in a myriad of human diseases ranging from inflammatory bowel disease, to depression. Well-informed nutrition policy decisions that consider scientific evidence should strive to improve health outcomes on a large scale. But it's not always easy to find the right evidence to back up those policies.
