NUTR 748 Nutrition Assessment and Counseling—3 Credits

Wed 4:30–7 pm

In this course, students will learn two critical skillsets for practitioners: Nutrition Counseling and Nutrition Assessment, with emphasis on physical assessment.  Students will learn behavioral and psychological theories that  are essential to facilitating positive health behavior changes, as well as critical counseling skills that can be applied in various nutrition counseling settings. In addition, the students will learn basic physical assessment skills needed to quickly identify nutrition related changes or deficiencies, including skinfolds, waist and hip circumferences, blood pressure and bowel sounds. Both assessment and counseling skills will be practiced in class and in simulation sessions. Nutrition students will work alongside other health professionals on simulated cases using “trained patients.” Guest lecturers will be brought in for their expertise as appropriate.



This course will be taught in collaboration with the NY SIM Center at Bellevue Hospital, with a mix of simulations, laboratory sessions, short lectures, online learning resources, and in-class exercises. Classes will be held mainly at SB campus at 119 St  (12 weeks) but 3 sessions will meet at the NY SIM center at Bellevue Hospital (28th St).
