We've recently added a comparative medicine (veterinary medicine) option to the HCOP Internship application, a program aimed at younger undergraduate students looking to explore health careers through the center for Rehabilitation Medicine. The program is unpaid, but free to attend, and allows students to spend 4 weeks in a healthcare professional unit of their choice. There is housing available through NYU dormitories (not free). This may be a good opportunity for any of your pre-health students, but I just wanted to alert you to the fact that there's a veterinary option as well if any of your pre-vet students are looking for an opportunity here in New York to experience laboratory animal medicine.
